Ingredients:
3 chicken, legs and thighs
2 sprigs, oregano, fresh
1 T. garlic, shaved thin
1 qt. lemon juice, freshly squeezed
1/4 c. olive oil
Salt and pepper to taste
Method of Preparation:
Preheat the oven to 400 degrees. Cut the chicken legs to separate the legs from the thighs and set aside. In an 8 by 10 glass dish, put the oregano, lemon juice, and garlic on the bottom. Season the chicken with salt and pepper. Place the chicken in the glass dish, skin side down, and pour the lemon juice over the chicken. Cook the chicken for 25 minutes, remove from the oven, and flip the pieces of chicken, skin side up. Cook for another 25 minutes or until chicken is cooked through and golden brown. Serve with rice pilaf and enjoy with three of your closest friends.
